On a buffalo sauce kick lately.
So here she is: a not quite melted buffalo chicken panini.
I was too hungry to wait for it to melt.
All it is is: a panini roll, from Wegmans; fully cooked grilled chicken strips, tossed in hot sauce; shredded mozzarella cheese; and green peppers, chopped up.
I anchored the meat with a sprinkle of cheese on the bottom, then piled on a few strips of chicken, more cheese and peppers. Tried to grill it in my George Foreman…nope. It wasn’t moving. So I popped it into the oven.
Accompanied by rice, this was delicious! Although I discovered only one of my stove burners works…a call I need to make to my landlord tomorrow.
