Just kidding. These s’more cupcakes turned out alright. I just know they could look better. I ran into some problems.
The cake itself and filling turned out nearly perfect. However, damn the graham cracker buttercream. DAMN YOU!!
I crushed the crackers somewhat finely. There were a few chunks here and there, but I thought eh, what’s a few chunks.
I scooped the frosting into my piping bag, then terror struck. THE CRACKER CHUNKS WERE CLOGGING THE TIP. Tried a different tip…to no avail. I had to spoon frosting onto the tops. Crisis semi-averted.
Next…I microwaved some chocolate chips to drizzle over the frosting. Too long in the ‘wave = chunky chocolate. Thinking quickly, I added milk and stirred quickly. Only one casualty with the chocolate. My drizzle bag exploded on one cake.
I’d have to say my favorite part was putting the marshmallows on. That meant it was over.
And I got all A’s from my bf’s coworkers…who these bad boys were made for.
Lessons learned, for next time.
